A little trick? You can cook the pizzaiola omelette without flipping it, thus avoiding the risk of it breaking or splattering on the work surface. Just use a lid and keep the flame very low: this way the egg will set on top without burning at the bottom.

Ingredients for a pizzaiola omelette for 2
- 4 eggs
- 1/4 onion
- 3/4 cup cherry tomatoes
- 3.5 oz mozzarella
- 1 tbsp Parmigiano Reggiano PDO (grated)
- 1 pinch oregano
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- to taste pepper

How to prepare the omelette with cherry tomatoes and mozzarella
To prepare the pizzaiola omelette, start by thinly slicing the onion (1). Wash and dry the cherry tomatoes, then slice them (2).
Dice the mozzarella (3) and let it drain for a few minutes to lose some of its whey. In a bowl, crack the eggs and season with salt, pepper, and a tablespoon of parmesan (4).
Beat them vigorously with a fork (5). Set them aside. In a non-stick pan pour in the oil and, once hot, add the onion and cherry tomatoes. Lightly salt and season with a pinch of oregano; let them wilt for 2-3 minutes (6).
Pour in the beaten eggs (7), lower the flame to the minimum, cover with a lid and leave to set for 3-4 minutes. Then add the mozzarella cubes (8).
Cover again and cook the omelette for 6-7 minutes (9) always on low flame and without flipping, until the egg is fully set and the mozzarella has melted (10).
You can enjoy the pizzaiola omelette straight away, with the mozzarella still gooey, or let it cool down and serve at room temperature.
Storage
You can store the omelette in the refrigerator for a couple of days, sealed in an airtight container.
Oven Cooking
If you prefer to cook the pizzaiola omelette in the oven, you can proceed as follows: after browning the onion and cherry tomatoes, transfer them to a 9-9.5 inch diameter baking tin lined with parchment paper. Pour the egg mixture over the top and garnish with the mozzarella. Bake in a static preheated oven at 350°F for about 15 minutes.
