How to Cook Roasted Pumpkin and Potatoes in an Air Fryer
To prepare pumpkin and potatoes in an air fryer, start by peeling the potatoes. Cut them into cubes about 0.6 inches (1.5 cm) per side (1). Wash the pumpkin, remove the skin, and cut it into cubes of the same size (2).
Peel the onion and slice it fairly thin (3). Combine the potatoes, pumpkin, and onion in a large bowl (4).
Season everything with a good pinch of salt, 2 tablespoons of oil, a grind of pepper, and half a teaspoon of smoked paprika (5). If you prefer, you can use a sprig of chopped rosemary. Mix everything thoroughly with your hands to distribute the seasoning evenly (6).
Transfer the vegetables to a large baking pan large enough to fit into the air fryer’s basket (7). Spread them carefully; the less the vegetables overlap, the better the final result will be. Cook pumpkin and potatoes in the preheated air fryer at 390°F (200°C) for 15-18 minutes. Halfway through, stir them with a spoon so they cook more evenly. When they are soft and golden, they’re ready (8).
Cooking times may vary by a few minutes depending on the type of potatoes and pumpkin used and the specific model of air fryer, so in the last minutes always check them and test their doneness. Serve roasted pumpkin and potatoes cooked in the air fryer while still hot.
Storage
This autumn side dish is at its best when freshly cooked, but if you have leftovers you can store them in the refrigerator for a day and reheat them briefly in the fryer itself or in the microwave before serving.
