Ingredients for the Peach Salad
- 2 nectarines
- 7.05 oz feta
- 2.82 oz arugula
- 1 tbsp sesame seeds
- 3 tbsps extra virgin olive oil
- 1 pinch salt
- 1 drizzle balsamic vinegar

To prepare the salad with peaches, feta, and arugula, I used nectarines, which have fairly firm flesh and smooth, tasty skin. In this case, you can leave the skin on.
Wash, dry, and cut them in half. Remove the pit, then slice them thinly.
Wash and dry the arugula, tear it with your hands and place it in a large salad bowl. Add the peaches and season everything with a pinch of salt and 3 tablespoons of extra virgin olive oil.
In a non-stick pan, briefly toast the sesame seeds: about a minute on medium heat, always watching them as it takes just a moment of distraction to burn them.
Cut the feta into cubes and add it to the salad, mixing well to distribute it evenly.
Finally, also add a drizzle of balsamic vinegar and the sesame seeds to the peach salad. Serve the salad with peaches, feta, and arugula immediately.
Tips and Variations
You can add some nuts to the peach salad: walnuts or pecans go wonderfully, but also pine nuts. Alternatively to sesame, you can use other oily seeds, like sunflower seeds.
