How to Prepare Puff Pastry Fans with Mortadella and Cheese
To prepare the savory fans with mortadella and cheese, start by unrolling the puff pastry, which must be rectangular. If you have round puff pastry, you can solve this by cutting a square inside the circle and repositioning the cut parts on one side to form a rectangle: a little pressure is enough, and the puff pastry will stick.
Spread it with stracchino or your preferred creamy cheese (1). Lay the mortadella slices on top (2), slightly overlapping them. Now start rolling the puff pastry onto itself, starting from one of the short sides (3).
Roll up to the middle of the pastry length (4). Roll up the other side of the pastry as well (5) until it meets the other roll (6). At this point, wrap everything in parchment paper and let it firm up in the freezer for about 30 minutes.
After the resting time, the filled puff pastry will have the right consistency to be easily sliced without spilling the filling: after removing the parchment paper, place it on the work surface and cut it into slices about 0.6 inches thick (7).
This will yield 15 puff pastry fans. Arrange them not too close together on a parchment-lined baking sheet. If they appear a bit flattened after cutting, give them a more rounded shape with your hands (8).
Bake the savory fans with mortadella and cheese in a preheated oven at 392°F (static) for 15-20 minutes, until they are puffed and golden (9). Remove them from the oven and let them cool slightly before removing them from the baking sheet.
Storage
