Ingredients for about 14 Puff Pastry Fans

If you are celiac, you can make sweet fans using gluten-free puff pastry; if you can’t find it in a rectangular shape, you can cut a rectangle from the round one or use the round one entirely.

  • 1 roll puff pastry (rectangular)
  • as needed sugar (about 1/4 cup)
  • as needed water

Tools

  • 1 Brush
  • 1 Knife smooth blade
  • 1 Baking Sheet
  • Parchment Paper

How to Make Sweet Puff Pastry Fans at Home

  • To prepare puff pastry fans, start by sprinkling a bit of granulated sugar on your work surface (1). This way, the puff pastry won’t stick. Unroll the puff pastry and place it on the work surface face down, so that the parchment paper is on top. Gently remove it (2).

    a. roll out puff pastry on a sugared surface
  • With a kitchen brush lightly brush the entire surface of the pastry (3). Don’t overdo it with the water or it will soak the pastry too much; just a little is enough to make the sugar adhere. Sprinkle the pastry with a good amount of sugar (4). Start rolling the puff pastry from the two shorter sides (5), rolling them only for a few cm.

    b. brush puff pastry with water and sugar
  • Lightly brush the two rolls obtained with a little water (6) and sprinkle them with some sugar (7). Continue this way, rolling the two ends for a few cm and dusting the rolled parts with sugar (8), after lightly moistening them with water.

    c. roll puff pastry from both sides
  • When the two ends meet, finish by brushing the surface of the roll with a little water and sprinkling it with some sugar (9). Then, with a sharp smooth-blade knife, cut the pastry into slices about 1/2 inch thick (I made mine a bit too thick) (10) and gently press them with your hands to compact and give them a more regular shape. Place the puff pastry fans on a baking sheet lined with parchment paper, well spaced apart (11).

    d. cut puff pastry roll to form fans
  • Bake them in a preheated oven at 392°F (static) for about 15 minutes, then take the baking sheet out of the oven and gently turn them over (12). Continue baking for another 5 minutes, until they are golden on both sides (13).

    e. bake sweet puff pastry fans in oven
  • Remove them from the oven and let them cool completely. You can serve sweet puff pastry fans for breakfast or as a snack: they are perfect with tea!

FAQ (Questions and Answers)

  • Can I use round puff pastry?

If you can’t find rectangular puff pastry – the gluten-free one, for example, is not easy to find – you can use round puff pastry following the same method: the two fans made with the ends of the roll will be a bit smaller and have a less graceful shape, but they will still be good.
