Ingredients for roasted zucchini in air fryer
- 1.1 lbs zucchini
- 1 tbsp extra virgin olive oil
- 1 pinch salt
- to taste pepper
- 1 bunch parsley
- A few leaves mint
- 1 pinch oregano

How to cook roasted zucchini in the air fryer
To prepare the zucchini in the air fryer, start by washing and drying the zucchini. Trim them, then divide them into two parts (1). Cut each part in half, and divide each half into 3 or 4 parts (2).
In the end, you should get sticks that are not too thin and as uniform in size as possible (3). Wash the aromatic herbs, dry them, and finely chop them with a knife (4).
Place the zucchini sticks in the basket of the air fryer, slightly overlapping them, after lining it with a sheet of parchment paper for air fryer. Brush them with a tablespoon of oil (5). Then season them with a pinch of salt, a grind of pepper, and the chopped aromatic herbs (6).
Briefly mix them with your hands (7) to evenly distribute the seasonings on all the zucchinis. Then cook the zucchinis in the air fryer at 392°F for 10 minutes (no need to preheat it). Halfway through cooking, give the zucchinis a quick stir to ensure even cooking. When they are slightly golden, remove them from the fryer (8) and transfer them immediately to a tray.
You can serve the zucchinis cooked in the air fryer as a side dish or as a light appetizer, excellent both hot and at room temperature; they can also be a quick way to cook zucchinis useful for other preparations, such as zucchini frittata, zucchini pesto, or a savory pie with zucchini and sausage.
Storage
You can store the zucchinis in the refrigerator, in a glass container, for 3 or 4 days.
