Air fryer pumpkin cutlets are a great alternative to meat. A simple and quick preparation, perfect to serve as an appetizer, side dish, or main course. The air fryer is now present in almost every kitchen and has become an essential appliance, especially when you want to prepare light, tasty, and quick recipes. These pumpkin cutlets are a great way to get even the little ones to appreciate pumpkin.

- 21 oz pumpkin (Butternut)
- 2 eggs (medium)
- 1.5 cups breadcrumbs
- 3/4 cup flour
- 1/2 cup parmesan
- spices (oregano – rosemary – garlic powder – paprika)
- salt
- pepper
- olive oil

Steps for Air Fryer Pumpkin Cutlets
As mentioned above, I recommend using Butternut pumpkin for this recipe to get round slices, but if you can’t find it, use another variety. Start by cleaning the pumpkin, remove the skin and any seeds. Then cut it into slices about 0.6 inches thick. Remove the skin from each slice.
Salt and pepper both sides of the slices. Beat the eggs with a pinch of salt in a bowl, while in a large dish add the breadcrumbs, flour, parmesan, and spices. You can use the ones you like best, of course. Mix everything well with a fork.
Start breading the pumpkin slices, dipping them in the egg and then in the breadcrumb mixture, making sure it adheres well on both sides.
Once breaded, place them one by one in the air fryer basket. Spray them with a bit of olive oil spray (if you don’t have spray oil, use extra virgin olive oil and lightly brush them).
Cook at 356°F for 20 minutes, turning them halfway through and oiling them again, then continue cooking.
To ensure even cooking, it’s important to cut the pumpkin into pieces of the same size.
You can also add smoked paprika, curry, or chili pepper to give the pumpkin a more intense and bold flavor. If you don’t have an air fryer, you can cook the cutlets in the oven at 392°F for about 30 minutes.
