Today I prepared this apple cake with ricotta, a very delicious dessert. Every now and then, in the afternoon, my friends and I gather for a little snack and lots of chat. So, the day before we decide on the dessert to be made. Since I am very good at making desserts, they send me the recipe and I make it. This cake is prepared in very little time with just a few simple steps. The dough remains very soft and slightly moist thanks to the ricotta. Ready to start?

  • 2 cups all-purpose flour
  • 1 cup ricotta
  • 3/4 cup sugar
  • 1/4 cup milk
  • 2 eggs
  • 2 apples (about 1 lb)
  • 1 packet baking powder
  • 1 lemon (grated zest)
  • 2 teaspoons brown sugar (about 2 tsp)
  • 1 tablespoon jam (of your choice)

  • I used a 9.5-inch cake pan, but you can also use a smaller one. In the second option, the cake will be taller.

    Before starting, peel the apples and cut one apple into cubes and the other into slices. Now proceed to prepare the batter.

  • Then, pour the flour into a bowl along with the ricotta, eggs, milk, and sugar, and mix to blend the entire mixture.

  • Add the baking powder and the grated lemon zest and mix again to incorporate the baking powder into the rest of the mixture.

  • Add the diced apple directly into the batter and stir with a spatula, mixing well.

  • Butter and flour your cake pan or line it with parchment paper. Pour the mixture inside and level it.

  • Now take the sliced apple and cover the entire surface, placing the slices slightly inserted into the batter. Sprinkle with brown sugar and bake in a preheated oven at 350°F.

  • Let the cake bake for 35/40 minutes, always adjusting to your oven. Always perform the toothpick test before taking it out of the oven.

  • In a bowl, put two teaspoons of jam of your choice. I used white grape jam. If you want to try it, the recipe is available here. Then add a teaspoon of water and stir. You can heat everything in the microwave for a few seconds. Stir so that the jam becomes less dense.

  • With a brush, spread the jam over the entire surface of your cake. Then let it cool and serve it to your guests.
