Steps for Baked Zucchini Flowers
First, focus on preparing the zucchini flowers. Wash them gently and remove the internal pistil. Preheat the oven to 400°F, so it will be at temperature when you are ready.
In a blender, place the corn flakes with the breadcrumbs, add the EVO oil, which can be replaced with sunflower oil for a lighter dressing. Blend for a few minutes until a homogeneous mixture is obtained.
In a bowl, beat the egg with the milk, then take one flower at a time, dip it in the egg and then in the breadcrumb and corn flakes mixture.
Line a baking tray with parchment paper and, as you bread them, place them on the tray spaced apart.
Bake the zucchini flowers and let them cook for about ten minutes. Always adjust based on your oven; they should be slightly golden.
Once cooked, take them out of the oven, sprinkle with a pinch of salt and Parmesan, and serve hot.
