  • 1 1/3 cups condensed milk
  • 3 tbsp butter
  • 1 cup shredded coconut
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon white wine vinegar

  • Take a saucepan and pour in the condensed milk, butter, and coconut. Place over low heat and stir continuously for about 10 minutes or until the mixture reduces and becomes more uniform and compact. Remove from heat, transfer to a bowl, and let cool. Cover and refrigerate for at least 45 minutes.

  • When it is cool enough to handle, use a teaspoon to take the necessary amount to form balls. To make this step easier, I recommend greasing your hands.

    Place the balls on a baking sheet lined with parchment paper and refrigerate for another 20 minutes.

  • Now prepare the caramel:

    Combine water, sugar, and vinegar in a pot. Cook over medium heat without stirring until the caramel reaches a light honey color. The caramel should reach a temperature between 302 and 309 °F.

  • Remove the balls from the refrigerator. Dip each ball in the caramel, using a fork or tongs, ensuring that the coating is even. Drain the excess before placing them on parchment paper to set. Repeat for all the coconut balls.

  • Once the caramel has hardened, you can remove excess caramel using the tip of a knife, being careful not to break the caramel coating the balls. This time I left them with the caramel, as I didn’t have time to trim the excess. They were waiting to taste these delights.
