Banana and Raisin Pound Cake

The Banana and Raisin Pound Cake is the perfect dessert for the whole family’s breakfast. It’s also great for the little ones’ snack and more. Easy and quick to make, it’s ready in no time. When I crave something sweet and have overripe bananas, this is the dessert I love to make. What do you say if we go prepare this dessert?

Ingredients for Banana and Raisin Pound Cake

  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 3 tbsps butter (soft)
  • 1/2 cup milk
  • 3.5 oz banana (ripe)
  • 1 egg
  • 1/2 packet baking powder
  • 1/3 cup sultana raisins

Steps for Banana and Raisin Pound Cake

  • When you decide to make this dessert, take out the butter in advance so it reaches room temperature. Soak the raisins in warm water as well. When the butter is soft, work it with the sugar using a fork, or you can speed up the process using electric beaters.

  • Mash the ripe banana with a fork and add it to the butter and sugar mixture. Start whisking, then after a few minutes, gradually add the milk and slowly sift in the flour with the baking powder. Continue whisking to blend all the ingredients well.

  • Take the drained and well-dried raisins, lightly flour them, and add them to the mixture, stirring with a spatula or wooden spoon.

  • Line the pound cake mold with parchment paper, or you can also butter and flour it, it’s up to you. Pour the mixture into the mold and bake at 340°F for about 50/55 minutes. Always adjust according to your oven, and when time is up, do the toothpick test before removing from the oven.

  • Once cooked, remove it from the oven and let it cool very well, then transfer it to a tray, now it’s ready to be served.
