Breaded Eggplant Medallions in Air Fryer

Ingredients for Breaded Eggplant Medallions

  • 1.1 lbs eggplants
  • 1/2 onion
  • 1 clove garlic
  • 1/2 tsp smoked paprika
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 egg
  • leaves basil
  • salt
  • pepper
  • extra virgin olive oil

Steps for Breaded Eggplant Medallions

  • First, remove the two ends of the eggplants, then slice and dice them into small cubes. Place the cubes in a colander with a pinch of salt for about 30 minutes so that the eggplants lose their slightly bitter aftertaste.

  • In a pan, put some oil, add the onion and garlic clove (you can also use garlic powder), add the drained eggplant cubes, paprika, and adjust with salt and pepper. Cook until the cubes are soft. Turn off the heat and let them cool slightly.

  • In a bowl, beat the egg with the Parmesan, add the finely chopped basil, now pour in the eggplants, breadcrumbs, and mix everything. Add more breadcrumbs if the mixture remains too soft.

  • Now form the burgers using a pastry ring or by hand. Coat each burger in breadcrumbs and cook them in the air fryer at 356°F for 15 minutes, turning them halfway through. The time will vary depending on the size of the burgers. If you don’t have an air fryer, heat oil in a pan and, when hot, fry the burgers for a couple of minutes on each side until golden, then serve hot and enjoy.
