These chicken and vegetable burgers in an air fryer are very easy to prepare and cook. A tasty idea that everyone will love. For this recipe, you need few and simple ingredients. For cooking, we will use the air fryer, for a healthy (since we will use very little oil) and very quick cooking. Let’s see together how to make this simple and quick recipe. Ingredients for Chicken and Vegetable Burgers in Air Fryer

  • 1.3 lbs chicken breast
  • 3 cups zucchini
  • 1 carrot
  • 1 potato (small)
  • 1/2 garlic
  • 3 tbsps grated Parmesan cheese
  • 1.8 oz breadcrumbs (more for coating)
  • 1 egg
  • salt (and pepper)
  • to taste aromatic herbs

Steps for Chicken and Vegetable Burgers in Air Fryer

  • First, focus on the vegetables. Trim the zucchini and grate them using a large-hole grater. Clean both the carrot and the potato and do the same.
    Place them in a bowl and add a pinch of salt, mix, and let them rest for 10 minutes.

  • In a food processor, blend the chicken breast cut into chunks and the garlic. Transfer the meat into a large bowl and add a pinch of salt, Parmesan cheese, and give it an initial mix.

  • Now take the vegetables and before adding them to the bowl, squeeze them to remove excess water.

    Add the egg, aromatic herbs, and spices to your liking (I added parsley, oregano, and paprika) mix well until you obtain a homogeneous mixture that is not too hard or too soft. .

  • To create the burgers, take a 3 to 4-inch cookie cutter and fill it, if you don’t have one, do like me, leave the mixture to rest in the fridge for at least 15 minutes, then take a spoonful of the mixture, form a meatball and then slightly flatten it to give it the shape of burgers.

  • Now coat the burgers in breadcrumbs and then transfer them to the air fryer basket, directly onto the grill. A light spray of extra virgin olive oil and let them cook at 375°F for about 15-17 minutes turning them halfway through cooking.

  • Once cooked, you can add slices of mozzarella, leave the burgers in the fryer for a few more minutes, then serve them on a bed of salad.
