Let me tell you about this chocolate zuccotto, that’s how I called it because the original name is hard for us to pronounce, as it’s a Russian dessert. I have a friend from that country and she occasionally shares her recipes with me. She has been living in Italy for many years now, and this dessert reminds her of her childhood. I asked her what the name of this dessert means in Italian and do you know what she replied? Anthill, that’s the name of this dessert. I must say it’s delicious with all that chocolate on top. You can also make individual portions using smaller molds.

  • Sift the flour with the baking powder and add it to the mixture while continuing to mix. You should obtain a smooth and homogeneous dough. Divide the dough into three parts, place each piece in a plastic bag, flatten it into a rectangle, and put it in the freezer for 30 minutes.

  • Now, if you have a meat grinder, you can run the dough through the machine to obtain long strips. Place the strips on a baking tray lined with parchment paper. Use more trays if needed.

  • If you don’t have the machine, you can use a grater with large holes.

  • Bake at 356°F and let it cook for about 20 minutes. In the meantime, prepare the cream. Pour the sweetened condensed milk into the stand mixer bowl and start blending at low speed. Add the butter and blend again. Add the cocoa and blend until you get a thick and smooth cream.

  • Let the dough cool, then crumble it with your hands and toss everything into the bowl, Chop the chocolate and add it to the bowl. Mix everything by turning with a spatula or spoon.

  • Line a bowl with plastic wrap and pour in the mixture. Smooth it out and refrigerate to cool.

  • After a couple of hours, invert the bowl onto a serving plate, remove the plastic wrap, and cover with chocolate shavings before serving.
