  • 1 1/2 cups all-purpose flour
  • 3 eggs
  • 3/4 cups sugar
  • 3/4 cups Greek yogurt (you can also use coconut flavored)
  • 1/3 cups sunflower seed oil
  • 1/4 cup milk
  • 1/2 cup grated coconut
  • 1 packet baking powder
  • 1/3 cup chocolate (chips or a piece)

Steps for Coconut and Greek Yogurt Cake with Chocolate

  • You can prepare this recipe whenever you have yogurt about to expire, in my case, Greek yogurt. In a bowl, beat the eggs with the sugar using an electric mixer until the mixture becomes nice and fluffy.

  • Pour the milk and oil into the mixture and mix well. Now add the flour sifted with the baking powder, then also add the grated coconut and continue blending for a few more minutes to mix all the ingredients well.

  • It’s time to add the chocolate. If you have chips, you can use those; otherwise, do as I do, take a piece of chocolate and chop it coarsely. Stir everything with a silicone spatula or even a wooden spoon.

  • Line a 9.5-inch cake pan with parchment paper, bake in a preheated oven at 350°F, and let it cook for about 40 minutes. Always adjust according to your oven.

  • Once cooked, let it cool well, then open the springform and move the cake to a serving plate. You can also dust the surface with powdered sugar.
