Tomorrow’s breakfast cake is ready; today I prepared the Coffee Banana Bread since I had some very ripe bananas. It’s a very easy cake to make and also suitable for an afternoon snack for the kids, accompanied by a glass of cold milk to give them an extra boost during study hours. I’ve added coffee to this cake, but if you like, you can add chocolate chips, orange juice, almonds, or pine nuts. Try it, you will love it. Below I leave you more cake recipes to try.

Ingredients for Coffee Banana Bread
- 2 cups all-purpose flour
- 2 bananas (about 8 oz mashed to add to the mix)
- 3/4 cup sugar
- 200 g yogurt (banana-flavored)
- 7 tbsp butter
- 2 eggs
- 1/4 cup coffee (cold espresso)
- 1/2 packet baking powder
- 1 banana (for decoration)
Steps for Coffee Banana Bread
For this cake, use a 9×4 inch pan. Beat the eggs with the sugar well using an electric mixer or a stand mixer until you get a light and fluffy mixture.
Now add the banana pulp that you have mashed with a fork.
Mix well, now add the banana yogurt, or plain, pour in the cold coffee, then the flour sifted with the baking powder and stir everything together. Blend with a spatula until you get a homogeneous mixture, then pour everything into a loaf pan lined with parchment paper or greased and floured.
Smooth out the mixture well, then add the banana cut in half lengthwise on the surface.
Bake in a preheated oven at 350°F and let it cook for about 50 minutes. Always adjust with your oven. Check the cooking with a toothpick; if it comes out dry and clean, the cake is cooked.
Once cooked, take your Coffee Banana Bread out of the oven and let it cool completely before serving.
