Ingredients for Coffee Cake without Milk and Butter

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup sunflower oil
  • 1/3 cup coffee (cold)
  • 1/2 cup water
  • 1 packet vanillin
  • to taste chocolate chips
  • to taste powdered sugar (for decoration)
  • 1 packet baking powder

Steps for Coffee Cake without Milk and Butter

  • This cake is very easy to make. Once you have all the ingredients ready, you can start by putting the eggs and sugar in a bowl or, if you have it, in the stand mixer.

  • Work until you get a light and fluffy mixture. Now slowly pour in the oil and then, subsequently, the water. Also add the coffee, which must be cold. Mix to incorporate all these ingredients.

  • Sift the flour with the baking powder, and once done, pour it into the liquid mixture, adding the vanilla as well. You can also use vanilla extract, just one teaspoon. Mix carefully until you get a smooth, lump-free mixture.

  • Line a cake pan with parchment paper and pour the mixture inside. I decorated it with chocolate chips, but you can also use almond flakes, hazelnuts, or sugar sprinkles.

  • Coffee Cake without Milk and Butter
  • Bake at 350°F and let cook for 40/45 minutes. Always adjust to your oven, and before taking it out, always do the toothpick test: if it doesn’t come out clean, let the cake stay a few more minutes.

  • Once the cake is out of the oven, let it cool and then sprinkle with powdered sugar.
