The coffee plumcake is a soft and fragrant dessert, quick to prepare for breakfast or a snack for the whole family. For me, this type of cake is very practical, it stays soft for several days and is easy to slice. As already mentioned, it is soft, and this is due to the presence of yogurt. You can use plain yogurt or, to give more flavor to the dessert, coffee yogurt. As for the coffee, the choice is vast; you can choose regular coffee (from the moka pot), coffee capsules, decaffeinated coffee, or instant coffee. I’m sure it will win you over at the first bite. Coffee Plumcake Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup plain yogurt (or coffee flavored or Greek yogurt)
- 1/3 cup sunflower oil
- 3 1/2 tbsp milk
- 1 egg
- 1 tbsp instant coffee (also decaffeinated)
- 1 1/2 tsp baking powder
Coffee Plumcake Steps
Start by lining or greasing and flouring an 18/20 cm loaf pan, and preheat the oven to 350°F. Prepare all the ingredients on the work surface to have them all at hand. Heat the milk and dissolve the instant coffee by stirring with a teaspoon.
Beat the egg with the sugar using electric beaters until they become white and frothy. Then, add the oil in a thin stream, the yogurt, and then the milk with the coffee. Stir, gradually adding the flour and the baking powder, mixing with the electric beaters.
Pour the mixture into the loaf pan, bake at 350°F for about 40 minutes. If the surface tends to darken, cover with a sheet of aluminum foil or parchment paper. Every oven is different, so the baking time may vary slightly. Always do the toothpick test before removing from the oven.
Allow the coffee plumcake to cool completely before removing from the pan, and it’s ready: a light dusting of powdered sugar and enjoy.
This dessert keeps well wrapped in plastic wrap or under a glass dome for two or three days.
