The Crumb Cake with Ricotta and Grapes is a delicious dessert I made yesterday to use some grapes that came from Puglia. To make it even more special, I added ground coffee. As a child, I loved eating ricotta, but only with sugar and ground coffee mixed together, and today I did the same with this dessert, adding white and red grapes.

Ingredients for Crumb Cake with Ricotta and Grapes
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp baking powder
- 2 tsp lemon (zest)
- 2 1/4 cups ricotta cheese
- 1 cup white grapes
- 1 cup black grapes
- 2 tbsps coffee (ground)
- 1/4 cup sugar
Steps for Crumb Cake with Ricotta and Grapes
First, wash, dry, and cut the grapes in half. If you want to do it quickly, use a food processor, otherwise proceed by hand.
Pour the sifted flour, granulated sugar, baking powder, and eggs into a bowl or food processor, then add the cold butter in small pieces and the lemon zest, then mix the ingredients to combine them until you get a crumbly mixture.
In a bowl, combine the ricotta with sugar and ground coffee until you get a smooth mixture.
Line a 9-inch pan with parchment paper and form the base and edges using about half of the dough. Pour the ricotta, then add the grapes, both white and black, leaving some aside to garnish the crumb cake.
Cover everything with the remaining crumbled dough and add the rest of the grapes.
Bake in a preheated oven at 350°F for about 45 minutes, or until the surface is golden brown.
