Crumble Cake with Concord Grapes

The Crumble Cake with Concord Grapes is a simple dessert to prepare, crispy on the outside and soft and delicious on the inside. I used Concord grapes, but it can be made with any type of red or white grapes. It’s a dessert I often prepare during the grape harvest season between September and October. If you have seedless grapes, you can use the whole grapes; otherwise, cut the grapes in half and remove the seeds.

Ingredients for Crumble Cake with Concord Grapes

  • 3 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 2 eggs (large)
  • 1 teaspoon vanilla extract
  • 1/2 packet baking powder
  • 5 oz butter
  • 1.1 lbs grapes
  • 1 oz butter
  • 1 tablespoon sugar
  • 1/2 tablespoon cornstarch
  • 2 tablespoons lemon (juice)

Steps for Crumble Cake with Concord Grapes

  • The first thing to do is wash the grapes. Then place the grapes in a bowl. If you’re using seeded grapes, cut the grapes in half and remove the seeds; if using seedless grapes, leave them whole.

    Place the grapes in a pan, preferably non-stick, add the butter and cook over high heat for one minute.

  • Dissolve the cornstarch with lemon juice in the pan and stir. Continue cooking for about another minute. You should see the grapes coated in a creamy sauce. Let cool.

  • Now prepare the shortcrust dough. In a bowl, sift the flour with the baking powder. Add the  eggs, the  sugar, the cold butter cut into pieces, and the vanilla.

    Quickly knead with your hands until you get a crumbly dough.

  • Line a 9-inch springform pan with parchment paper. Cover the base and also the sides with half of the dough, pressing it well with your hands.

  • Pour the grapes inside, (keep a couple of tablespoons aside to garnish on top.) Now cover with the other half of the dough, trying to crumble it with your hands.

    Add the remaining grapes kept aside on top, pressing each grape lightly.

  • Bake in a preheated oven at 350°F and let it bake for 35/40 minutes. Always adjust according to your oven, the surface should be golden. Once baked, let it cool down, and if you like, before serving you can sprinkle it with powdered sugar.
