Steps for Dates with Gorgonzola and Speck
This is definitely one of the easiest preparations ever, even those with little experience in the kitchen can make it. This time I cooked them in a pan because I think they stay softer. If you want, you can use the oven. Bake at 350°F and cook for 15 minutes or until the speck is nicely browned and crispy.
For this recipe, prefer large dates, unfortunately mine were not. With a knife, make an incision in the date to remove the central pit. Try not to cut too much, the two ends should remain attached.
Cut the speck slices in half (you can also substitute with bacon). Fill each date with a bit of gorgonzola, then close well so that the cheese doesn’t spill out too much during cooking.
Take the speck slices and wrap the dates, then secure everything with a toothpick.
Place the stuffed dates in a non-stick pan, without adding oil, let them cook over low heat for about 10 minutes, turning them occasionally.
Once ready, remove from heat. Your dates with gorgonzola and speck are perfect to be served! Enjoy your meal!
