Today I made this Easter cake rich in candied fruits and raisins. The recipe is from my blogger friend, her blog is called “Sweet and Savory Creations by Cri.” For this preparation, she used a dove mold, but I ran out of those, so I opted for a star-shaped one. Her dove has a filling of chocolate chips while I preferred the classic candied fruits and raisins (my favorites). It is a really quick dessert to make, and you can choose between the two fillings or maybe just use raisins or just candied fruits, it’s up to you. Also for the mold, if you have the dove one, use it.

Ingredients for Easter Cake
- 6.35 oz sugar
- 3 eggs
- 3/4 cup milk
- 2.75 cups all-purpose flour
- 1/2 cup sunflower oil
- 1 packet instant yeast for savory preparations
- 3.5 oz candied fruits
- 2.8 oz raisins
- 1 vial almond flavor
- 1 orange zest (grated)
- 1 lemon zest (grated)
- almonds
- sugar sprinkles
- powdered sugar

Steps for Easter Cake
For this recipe, you can use either electric whisks or a stand mixer. Soak the raisins in a bowl with warm water and let them soak. Then pour the egg whites into one bowl and the yolks into another. Start by beating the egg whites until stiff peaks form, then set aside.
Pour the sugar into the yolks and start beating until you obtain a frothy mixture. Then add the almond flavor, grated lemon and orange zest.
Continue working, gradually adding the oil and milk, and, little by little, the flour. Also add the yeast, at this point add the drained and dried raisins and candied fruits to the mixture.
Take a couple of tablespoons of the beaten egg whites and fold them into the mixture with movements from bottom to top. Continue like this until finished.
Pour the batter into the mold, decorate with almonds and sugar sprinkles. Bake at 356°F and let it cook for about 40 minutes. Always adjust with your oven.
Remove your Easter Cake from the oven and let it cool.
Before serving it at the table, sprinkle it with some powdered sugar.
