Grandma’s Apple Cake with Yogurt and Cinnamon, the heart of our breakfast in the farmhouse.
There’s a scent that, more than any other, smells of home, family, and slow awakenings in the countryside: it’s that of the Apple Cake. In our farmhouse, this is not just a recipe, but a small tradition that we bring to the table every morning for our guests.
We called it “Grandma’s Cake” because it embodies those simple secrets that make a homemade sweet special: the use of yogurt to make it as soft as a cloud, the warmth of cinnamon, and, above all, our local apples, sweet and juicy just right.
This recipe is perfect because the yogurt keeps it very moist for days (essential for breakfast buffets) and the cooked apples please everyone, both adults and children.

Steps for Grandma’s Apple Cake with Yogurt and Cinnamon
Preparing the Apples
Peel the apples, remove the core, and cut them into cubes, depending on your preferred texture.Place them in a bowl with the lemon juice (to avoid browning) and cinnamon to flavor them.
Whipping the Eggs
In a large bowl, whip the 3 eggs with the 1 cup of sugar using an electric whisk.Work the mixture for about 5 minutes until it becomes light, frothy, and triples in volume.
Adding Liquid Ingredients
Reduce the speed of the whisk and add the 2 cups of yogurt (plain or vanilla).
Slowly pour in the 1/2 cup of sunflower oil and add the grated lemon zest.Incorporating the Dry Ingredients
Sift the 2 1/2 cups of flour together with the package of baking powder.
Add the dry ingredients to the mixture gradually, gently folding from bottom to top with a spatula or on low speed with the whisk to avoid deflating the batter.Combining the Apples
Incorporate some of the apples directly into the batter (about half).
Grease and flour a cake pan (recommended diameter 9.5-10 inches, or you can also line it with parchment paper).
Pour the batter into the pan and smooth the top. Place the remaining apples on top of the batter. I also added some walnuts.
Baking Bake in a preheated static oven at 350°F for about 45-50 minutes.
Tip: With the apple cubes, the batter is more moist, so check the baking well with a toothpick in the center of the cake.Cooling
Remove from the oven and let cool. The combination of the softness of the apple cubes and the crunchiness of the walnuts will make your cake even more delicious!Tip
If you have some almond cookies, you can crumble a few over the apple cake batter before baking: they will add an incredible toasted and crunchy note!
