  • 2 1/8 cups all-purpose flour
  • 10 tbsps butter
  • 3/4 cup hazelnut flour
  • 1 cup powdered sugar
  • 3 tbsps egg yolks
  • 1 pinch salt
  • 1 tbsp vanilla extract
  • 3/4 cup chopped hazelnuts
  • 1 egg white (from an egg)

Steps for Hazelnut Shortbread Cookies

  • The preparation of the hazelnut shortbread cookies is really easy and quick. In a food processor with blades, pour the all-purpose flour and the cold butter cut into small pieces. Blend until you get a sandy mixture. Add the powdered sugar, a pinch of salt, the hazelnut flour, the tablespoon of vanilla, and the egg yolks. Combine all the ingredients by blending again until they are all incorporated.

  • Now pour the mixture onto the work surface, work it until you form a dough that you will let rest in the fridge, wrapped in plastic wrap, for at least 30 minutes.

  • When the shortbread dough has rested, take it out of the refrigerator, lightly flour the work surface, and roll the dough with a rolling pin to a height of 0.39 inches.

  • Use a cutter to make the cookies, then place them on a baking sheet lined with parchment paper, one next to the other.

  • Brush all the cookies with the egg white and decorate with chopped hazelnuts. Bake in a preheated oven at 338°F and let them cook for about 20 minutes. Always adjust to your oven regarding the cooking time.
