  • 2 1/4 cups all-purpose flour
  • 1/2 cup butter (room temperature)
  • 7 tbsp sugar
  • 1 egg
  • 1/4 cup lemon juice
  • 2 1/2 tsp baking powder
  • 2 lemon zest (grated)
  • 1 pinch salt
  • to taste granulated sugar (and powdered sugar)

  • The first thing to do when you want to prepare lemon cookies is to take the butter out of the fridge, as it should be quite soft for this recipe. Then, get some organic lemons because we will need both the juice and the outer zest, which should be grated, being careful not to grate the white part.

  • You can use either a stand mixer with a K or paddle attachment, a food processor, or simply electric beaters. Then put the butter (softened) in a bowl and beat it with the sugar and the pinch of salt.

  • Add the egg, the grated zest of the two lemons, and their juice, mixing to combine the ingredients well.

  • Now gradually pour in the flour sifted with the baking powder. Mix again until you get a smooth and soft dough. Form a dough ball, wrap it with cling film, and let it rest in the fridge for about an hour.

  • After the resting time, take the dough, form walnut-sized balls, roll the balls in granulated sugar and then in powdered sugar, making sure the latter is abundant.

  • Line a baking sheet with parchment paper and place the balls spaced apart. Bake in a preheated oven at 350°F and let them bake for about 12/14 minutes. The cookies should remain white on the surface, and as they crack during baking, they should turn golden in the crevices.
