  • 2 eggs (room temperature)
  • 3/4 cup sugar
  • 2 mandarins (untreated)
  • 3.5 tbsp butter
  • 2/3 cup milk
  • 2 cups all-purpose flour
  • 1 packet baking powder
  • 1 pinch fine salt

Steps for Mandarin Cake

  • First, prepare the ingredients; both the butter and eggs should be at room temperature. In a blender, place the mandarins cut into pieces, removing any seeds. Blend at maximum speed until very smooth.

  • Beat the eggs with the sugar and the pinch of salt, using an electric mixer or a stand mixer. 

    Add the blended mandarins and mix everything well.

  • Now incorporate the butter, which should be soft, and the milk. Continue blending at low speed.

  • It’s time to add the sifted flour with the baking powder. Continue mixing until you get a lump-free batter.

  • Line a 8.7-inch springform pan with parchment paper and pour the batter inside. Bake in a preheated oven at 340°F and let it cook for 35/40 minutes. Always do the toothpick test before removing from the oven.
