Meat and cauliflower meatballs: Today the weather is really bad, it’s raining and a bit chilly. After breakfast in the morning, I start thinking about what to prepare for the day’s meals. I open the fridge and see a small cauliflower in the vegetable compartment, and a small package of minced meat to use in the freezer. And so here comes the idea: combine meat and vegetables for a tasty main course. Try it to believe it! Let’s see what’s needed for this recipe.

Ingredients for Meat and Cauliflower Meatballs
- 14 oz minced beef (or mixed)
- 1 cup cauliflower, cooked, boiled
- 1 egg
- 1 cup Parmesan cheese
- 3 tbsp breadcrumbs
- 1 clove garlic
- lemon (a little zest)
- salt (and pepper)
- 2 tbsp milk

Steps for Meat and Cauliflower Meatballs
Before starting the preparation of this main course, prepare the cauliflower. Once cleaned and washed well, boil it in salted water until cooked. Drain it and set aside.
In a bowl, put the meat, finely chopped garlic, the egg, Parmesan cheese, lemon zest, breadcrumbs with milk, and mix everything very well.
Take the cauliflower you need, the rest can be served as a side dish. Place it in a bowl and mash it very well with a fork until you have a puree.
Add it to the meat mixture and mix again. Taste the mixture now and if it is bland, adjust with salt and pepper.
Now form the meatballs. At this point, you can cook them in the oven by placing them on a baking sheet lined with parchment paper or, like me, cook them in an onion and tomato sauce.
Chop the onion and let it lightly brown in a pan with a tablespoon of oil, add the tomato sauce, adjust with salt, and as soon as the sauce comes to a boil, add the meatballs. Let them cook for about 20 minutes, the time needed for the meat to cook through.
The rest of the cauliflower can be served seasoned with just oil or sautéed in a pan with garlic, parsley, and a pinch of chili pepper. A really tasty side dish.
