I had wanted to make this recipe, the meat burek, for a long time. I got the recipe from my nephew’s wife, who is Albanian, she often prepares them, even making homemade dough. I preferred to buy ready-made phyllo dough to speed up the preparation. I will certainly want to try making it myself at home. There are endless variations, especially depending on the filling, which can be meat, vegetables, cheese, or even sweet. It is usually prepared in a round pan and, once cooked, cut into slices. Ingredients for Meat Burek

  • 9 oz ground pork
  • 9 oz ground veal
  • 1 package phyllo dough
  • 1 onion
  • to taste salt
  • 1 egg yolk
  • extra virgin olive oil
  • pepper

Steps for Meat Burek

  • Place the extra virgin olive oil and finely chopped onion in a pan. Sauté for a few minutes.

  • Once wilted, add the ground meat, salt, and pepper. Sauté for a few minutes on high flame, then lower the flame and continue cooking, stirring occasionally.

  • Once cooked, let it cool. Place a sheet of parchment paper on a work surface, place the first sheet of phyllo dough, brush with extra virgin olive oil (you can also use melted butter), then place another sheet of phyllo dough on top and brush again.

  • Distribute the meat on the longer side, then roll the phyllo dough over itself to form a cylinder. Now comes the most delicate part, turn the cylinder over itself to form a spiral. Do not add too much filling as the phyllo dough could break when forming the spiral.

  • Continue until all the ingredients are used. Place all the spirals in a baking tray, beat the egg yolk with a little water, and, with a brush, coat all the spirals.

  • Bake in a preheated oven at 356°F (180°C) and let it cook for about 30 minutes, or until they are golden brown. Remove the meat burek from the oven, let them cool for a few minutes, then serve them and enjoy your meal!
