Today I made Muffins with Fig Jam. I love making these treats because they are perfect for breakfast. During this period, I usually make them with strawberries or cherries picked from my garden, but today I wanted to change things up and use some jam I had open in the fridge. Ingredients for Muffins with Fig Jam
- 2 eggs
- 3/4 cup sugar
- 1/2 cup milk
- 1/4 cup sunflower oil
- 1/2 packet baking powder (about 8 g)
- as needed jam (of your choice)
- as needed powdered sugar (for decoration)
- 1 1/4 cup all-purpose flour

Steps for Muffins with Fig Jam
For this recipe, the eggs and milk must be at room temperature. Prepare a 12-muffin pan and line the cavities with muffin cups. I used silicone ones, but you can use whichever ones you have at home, paper ones work just fine too.
Sift the flour, baking powder (half packet), and sugar, and mix with a wooden or silicone spatula; set aside.
In another bowl, break the eggs and beat them with an electric mixer for a few minutes. Now add the sunflower oil and milk. I used whole milk, but you can substitute it with semi-skimmed milk or another beverage. Mix with the electric mixer for a few seconds.
Gradually pour the dry ingredients into the bowl, stirring at low speed initially, and once fully incorporated, increase the speed and mix until smooth.
Spoon the batter into the muffin cups, filling them about one-third full to prevent overflow during baking.
Use a teaspoon to place a bit of jam in the center of each muffin cup. Bake in a preheated oven at 340°F (170°C) for about 25 minutes. Always perform the toothpick test to check for doneness when the time is up.
Remove the tray from the oven and let the Muffins with Fig Jam cool. Decorate with powdered sugar and serve them for a snack or breakfast.
