Ingredients for Orange Plumcake
- 2 eggs
- 1 1/4 cups flour
- 3/4 cup sugar
- 2/3 cup sunflower seed oil
- 1 packet baking powder
- 1 orange (about 8 oz)
- 1 cup powdered sugar
- 1/4 cup orange juice

Steps for Orange Plumcake
Wash the orange and dry it. Remove the two ends and cut it into pieces with the peel, removing any seeds.
Place the orange in a blender and blend until a thick cream is obtained, set it aside.
In a bowl, beat the eggs with the sugar using the electric beaters for a couple of minutes, or if you have a stand mixer, use that. The mixture should become light and whitish.
While continuing to blend, add the seed oil, orange puree, and finally the flour and baking powder sifted.
Line a mold with parchment paper (I used a 12 x 4.3-inch plumcake mold), pour the mixture inside, and bake in the oven at 350°F for about 40-45 minutes on the middle rack. Always adjust according to your oven. Before taking the cake out of the oven, always do the toothpick test to ensure it is also cooked inside. Let it cool, then remove it from the mold.
While your cake cools, prepare the glaze by placing the sifted powdered sugar in a bowl and the orange juice and mix. The sauce should be dense but fluid. Spread the glaze with a spoon over the surface of the orange cake and let it dry. Slowly it will be absorbed, at which point you can serve it at the table.
