Hello and welcome back to my blog, today I present to you this recipe, pork curry with zucchini, a tasty dish full of exotic flavors, thanks to curry, a spice particularly loved and used in Indian cuisine. Simple and quick to prepare. It’s a perfect dish even for those who aren’t very skilled in the kitchen, given its simplicity. A too good second course not to share with you.

Ingredients for Pork Curry with Zucchini
- 1.5 lbs pork loin (sliced)
- 2 zucchini (medium)
- 1 onion (small)
- 1 clove garlic
- 1 tablespoon curry
- 2 tablespoons cornstarch (or flour)
- 1 cup milk
- salt
- 3.5 oz extra virgin olive oil

Steps for Pork Curry with Zucchini
Remove the two ends of the zucchini, then cut them in half, then into small slices. Put a drizzle of oil and the crushed garlic in a pan, preferably non-stick, sauté slightly and then add the zucchini, a pinch of salt, and cook for 5 minutes. Then transfer to a plate and set aside.
Cut the slices of pork into pieces, then coat them in cornstarch or flour, removing the excess flour. In the same pan where you cooked the zucchini, add a drizzle of oil and the finely chopped onion. When the onion turns transparent, add the flour-coated pieces of meat.
Brown for 3 or 4 minutes, turning often. Lightly salt. In a glass, dissolve the curry in the milk, and when the pork is lightly golden on all sides, pour the milk mixed with curry, cover with a lid, and cook on low heat for about 10 minutes.
After the time has passed, remove the lid, add the zucchini, mix well, and continue cooking until the sauce thickens.
Plate and serve at the table, accompany this main dish with steamed Indian rice.
