Ingredients for Pork Tenderloin with Mushrooms
- 1 pork tenderloin
- 10.5 oz mushrooms (fresh champignons)
- 3.5 tbsp butter
- 3.5 tbsp extra virgin olive oil
- as needed flour
- 1/4 cup white wine
- 1 bunch parsley
- as needed salt (and pepper)
- 1 clove garlic
Steps for Pork Tenderloin with Mushrooms
If you prefer, you can replace the champignon mushrooms with porcini mushrooms, or you can use those pre-mixed packages. So, clean the mushrooms by removing the dirt on the stem with a knife, cut them into slices. In a pan, pour some olive oil, finely chopped garlic, lightly brown it, pour the mushrooms in, and let them cook. Add salt and parsley. Remove the mushrooms, and in the same pan, you will cook the meat.
Slice the pork tenderloin, gently pound them slightly (this meat is very tender), lightly salt the slices. Then, pass them in a dish with flour.
Melt the butter in the pan with a drizzle of oil, add the meat, and brown it on both sides. Deglaze with white wine and add the mushrooms.
Lower the heat and let it cook so that the meat blends well with the mushrooms. Just before turning off, add some chopped parsley.
