You really have to try this pumpkin parmigiana. A simple preparation with a soft and stringy consistency inside. It’s a recipe that should be made in this autumn period: I prepared a purely vegetarian dish, but if you like, you can add cooked ham along with the cheese and pumpkin. The final result will leave everyone amazed.

Ingredients for Pumpkin Parmigiana
- 2.2 lbs pumpkin
- 10.5 oz scamorza cheese
- 1/3 cup flour
- 2.1 oz grated Parmesan cheese
- 1.4 oz breadcrumbs
- as needed extra virgin olive oil (about 2 tablespoons)
- as needed fine salt (and a pinch of optional pepper)
- oregano

Steps for Pumpkin Parmigiana
To prepare the PUMPKIN PARMIGIANA, start by cleaning the pumpkin. Peel it using a potato peeler and slice it into pieces about a quarter of an inch thick using a mandoline or a sharp knife.
Coat the pumpkin slices in flour, turning them on both sides, then shake off the excess.
Place the floured pumpkin slices in a baking dish greased with a little oil to form the first layer. Try to fill the gaps between slices with pumpkin trimmings.
Add a sprinkle of breadcrumbs, a sprinkle of Parmesan cheese, a pinch of salt and pepper, oregano leaves here and there, slices of scamorza or another cheese of your choice, and drizzle a little oil over everything.
Continue this way until you use all the pumpkin and other ingredients. On the last layer, do not add the scamorza, which you will set aside to add just before the end of cooking with some oregano leaves. This way, it will remain stringy.
Cover the dish with a sheet of dampened and wrung-out parchment paper, then bake at 350°F and cook for about 40 minutes.
After the time has elapsed, remove the parchment paper and place the dish on the top rack, turn on the grill, and let it brown for about 5 minutes. Serve hot and enjoy your meal.
