  • 2/3 cup butter (cold, cut into cubes)
  • 7/8 cup confectioners' sugar (powdered sugar)
  • 1 egg (+ 1 yolk)
  • 1 teaspoon vanilla extract (or the grated zest of 1 lemon)
  • 1 pinch salt

  • The dough: In a large bowl (or in a mixer), work the flour with the cold butter until you obtain a sandy mixture. Add the confectioners’ sugar, the whole egg, the yolk, the chosen flavoring and the pinch of salt.

  • Shaping: quickly knead by hand or with the machine until you obtain a smooth, homogeneous dough ball. Do not overwork it to avoid warming the butter.

  • Rest (Essential): wrap the dough ball in plastic wrap and let it rest in the refrigerator for at least 30 minutes. This will ensure the bunnies don’t lose their shape in the oven.

  • Rolling: take the dough back and roll it out with a rolling pin on a floured surface to reach a thickness of about 3/16 inch (≈0.2 in).

  • Cutting: use your bunny-shaped cutter to cut out the cookies. Arrange them spaced apart on a baking sheet lined with parchment paper.
