Here are the savory muffins in an air fryer, an original and deliciously easy idea to make. A very simple dough without leavening, where I added artichokes in oil, but if you want you can replace them with zucchini, cherry tomatoes, mushrooms, etc. Basically, with whatever you have in the fridge.   • 3 eggs
  • 0.42 cup vegetable oil
  • 0.42 cup milk
  • 1 tbsps instant yeast for savory preparations
  • 5.3 oz artichokes in oil
  • 1 tsp salt

Steps for Savory Muffins in Air Fryer

  • This recipe takes very little time. You can use the air fryer for quick cooking or the oven to naturally extend the cooking times. You can use either a stand mixer or proceed by hand.

  • Pour the eggs, vegetable oil, milk, grated cheese, salt, and pepper (if you like) into a large bowl and stir with an electric whisk on low speed.

  • Add the sifted flour, the yeast for savory cakes and mix to eliminate all lumps. Continue until you obtain a smooth mixture.

  • Take the artichokes in oil, cut them into pieces, and insert them into the mixture. Stir with a spatula to mix everything well.

  • With the help of a spoon, take the mixture and pour it into each paper or silicone cup, avoiding reaching the edge.

  • Place the muffins directly on the basket and cook at 338°F for 15 minutes. Check the cooking when time is up by opening the air fryer and verify with a toothpick if they are ready, otherwise start again and let them cook for another couple of minutes.

  • If you use the traditional oven, instead, bake in a preheated oven at 356°F for about 20-25 minutes, always checking with a toothpick.
