To make this delicious savory tart, the first thing to do is prepare the shortcrust pastry. You can find the recipe by clicking here, or you can buy it directly at the supermarket to speed up the preparation.
Wash the head of radicchio, remove the core at the base and chop the leaves coarsely. Then chop the onion.
In a non-stick pan, pour a drizzle of extra virgin olive oil and add the onion and radicchio. Cook over medium heat for a few minutes, until softened. Season with salt and pepper. Then let it cool.
Take a 9-inch diameter pan, line it with wet and squeezed parchment paper. Roll out the shortcrust pastry into a thin sheet with the help of a rolling pin. Place the pastry in the tart pan, cutting off the excess with a knife. Prick the bottom with a fork.
Add the filling and, with the leftover dough, form strips to create the classic criss-cross pattern over the tart.
Bake in a preheated static oven at 356°F (180°C) and cook for 30 minutes. Always adjust according to your oven. Your tart, once cooked, should have a golden color.
Once cooked, distribute the provola or another type of cheese of your choice on the surface. Put the tart back in the turned-off oven for a few minutes to slightly melt the cheese. Let it rest for a few minutes, then unmold and serve.
