Welcome back, today I present this recipe: the stir-fried vegetable mix with cheese, simple and tasty, which goes well with any dish, but also as a main course. You can choose the vegetables you like best according to the season. For this dish, I used zucchini, eggplants, and peppers. If there are leftovers, just take some puff pastry or shortcrust pastry and make a savory pie. This dish is prepared in no time, it’s light and is great for both lunch and dinner.

Stir-fried Vegetable Mix with Cheese Ingredients
- 3 zucchini
- 2 eggplants (long)
- 2 peppers (of different colors)
- 14 oz cheese (pecorino, caciotta, Greek feta)
- 2 pinches salt
- 2 tbsps sesame seeds (or other seeds of your choice)
- 2 tbsps extra virgin olive oil
- 1 clove garlic
Stir-fried Vegetable Mix with Cheese Steps
Wash all the vegetables and dice the zucchini, peppers, and eggplants, trying to make them the same thickness and size.
In a high-rimmed pan, heat the extra virgin olive oil with the garlic clove, either whole or minced finely. Once it starts to sizzle, add the vegetables. If using the whole garlic clove, remove it before adding the vegetables.
Add salt and spices to your liking (oregano, parsley, mint). Cook over medium heat without a lid for about 7 minutes, stirring often to brown them on all sides. The vegetables should remain crunchy, but if you prefer them more cooked, add a couple of tablespoons of water and continue cooking until the water has completely evaporated.
When the vegetables are cooked, you can add the cheese cubes of your choice, turn off the heat, cover the pan with a lid and let them sit for a few minutes to soften the cheese. Alternatively, serve the hot vegetables in bowls, and on each bowl, add the cheese cubes and seeds of your choice, in this case, sesame seeds and fresh basil leaves.
