Stuffed Chicken Escalopes Ingredients
- 8 slices chicken breast
- 1 eggplant (large or 2 small)
- 8 slices mozzarella (or other type of cheese)
- to taste flour
- 1/3 cup white wine
- 2 tbsps extra virgin olive oil
- 1 1/2 tbsps butter
- 1 lemon juice
- to taste salt
Steps for Stuffed Chicken Escalopes
The first thing to do is grill the eggplant slices. Once sliced, grill them on both sides, and once grilled, place them on a plate for later use.
Pour the flour into a plate or a sufficiently large dish, then coat each chicken breast slice well on both sides.
In a pan (preferably non-stick), melt the butter with the oil, (you can skip the butter if you don’t like it, in this case increase the amount of oil).
When the oil is hot, place the chicken slices side by side and let them brown well, then turn them over, add a pinch of salt, and let them brown.
Deglaze with wine, then add the lemon juice, now put the grilled eggplant slices on each escalope. A pinch of salt and cover with mozzarella slices.
Cover with a lid and let it cook for a few minutes, just enough time for the mozzarella to melt.
When the mozzarella has perfectly melted, you just need to turn off the heat and serve this main course at the table.
