Turmeric Risotto with Cheeses

Turmeric Risotto with Cheeses is definitely one of my favorite first courses; it’s rich, creamy, and very easy to prepare. Turmeric is also known as the saffron of India due to the intense yellow color of its rhizome. It is also said that the turmeric plant has a positive effect on our health. Besides the flavor, Turmeric gives food a bright yellow color, which is why I use it a lot in sauceless dishes. Below I provide other ideas for a tasty first course:

Ingredients for Turmeric Risotto with Cheeses

  • 1 qt vegetable broth
  • 2 cups rice
  • 3.5 oz provolone
  • 1.75 oz grated parmesan
  • 2.1 oz gorgonzola and mascarpone
  • 2.1 oz gruyere
  • 1.4 oz extra virgin olive oil
  • 1/2 onion
  • 1 tsp ground turmeric
  • 1/4 cup dry white wine

Steps for Turmeric Risotto with Cheeses

  • For cooking the risotto, I usually use vegetable broth, which I prepare often because, besides risottos, I use it for soups or legume-based purees in the evening, an easy and quick one-dish meal. If you don’t have time to prepare the vegetable broth, you can dissolve 2 vegetable bouillon cubes in 1 quart of water. Keep the broth on the stove so it remains hot before you start cooking the rice.

  • Finely chop the onion and let it soften in the extra virgin olive oil; then add the rice and toast it for about three minutes, stirring with a wooden spoon, and finally deglaze with the white wine.

  • Gradually add the broth and let it cook on low heat, in the meantime dice the cheeses and set them aside.

  • When the rice is almost cooked, add all the cheeses, including half of the grated parmesan, mix and also add the teaspoon of turmeric and a pinch of pepper; pepper enhances the beneficial effect of turmeric.

  • When the cheeses have melted well, remove from the heat and add a knob of butter with the remaining parmesan.
