- 4 zucchini (medium)
- 12 zucchini flowers
- 5.3 oz grated Parmesan cheese
- 14.1 oz scamorza cheese
- to taste breadcrumbs
- salt
- to taste extra virgin olive oil
- parsley
- pepper
Steps for Zucchini and Flower Pie
The zucchini and flower pie is a super easy dish to make. First, clean the zucchini by cutting off the ends. Then, using a mandoline, slice them fairly thin, salt them, and let them rest for a few minutes. Now focus on the zucchini flowers, wash them and gently remove the lateral growths at the base, remove the inner pistil, and set them aside.
Take the zucchini slices and let them dry on a towel.
In a bowl, combine the breadcrumbs, Parmesan cheese, pepper, finely chopped parsley or mint, and mix everything well.
Pour a little oil into a baking dish and brush it over all surfaces. Dip the slices into the breadcrumb and cheese mixture, then start forming the first layer of zucchini in the baking dish. Continue with a layer of zucchini flowers and then a layer of scamorza cheese slices. You can also replace it with mozzarella or another type of melting cheese.
Continue this way until all ingredients are used up. Note that the last layer should be just zucchini. A sprinkle of Parmesan, a drizzle of oil, and into the oven at 356°F (180°C) for 30 minutes. Always adjust according to your oven. The dish should be golden.
If you want to make this dish even tastier, add slices of cooked ham or bacon between layers. Instead of Parmesan, use Pecorino cheese.
