The air fryer chicken roll is an easy second dish that pleases everyone. It’s made with deboned chicken thighs, much more tender and flavorful than chicken breast. To make it even lighter, you can remove the skin. Flavored with fresh herbs, it pairs well with the classic side of potatoes.

Ingredients
- 2 chicken thighs
- 1 sprig rosemary
- 2 sprigs thyme
- 1/4 teaspoon garlic powder
- 1 lemon (zest grated)
- salt
- pepper
- 2 tablespoons extra virgin olive oil

Steps
On a cutting board, debone the chicken thighs while keeping the skin on, or buy them already deboned from your trusted butcher. The thighs should also include the drumstick.
Chop the rosemary and thyme. Grate the lemon zest into a small bowl, add the herbs with the salt, pepper, and oil, and mix with a fork.
Brush the thighs on the inside. Roll them up and tie with kitchen twine. Brush the outside as well.
Place the chicken thighs inside the basket and cook at 375°F for 45 minutes, turning them halfway through.
Once cooked, remove them from the basket, remove the twine, and slice, not too thin.
Serve with a side of potatoes or another of your choice.
Tips
The chicken thighs can also be flavored with paprika, curry, or other herbs.
They can also be stuffed with ham and cheese.
