The almond brioche are delicious brioche rolls braided with an almond cream filling. Made with the same dough as the apple turnovers, they have a soft and melting texture. They can also be made lactose-free using plant-based ingredients.

Ingredients

  • 4 cups all-purpose flour
  • 2/3 cup butter (or plant-based)
  • 3/4 cup eggs
  • 1/3 cup milk (or plant-based beverage)
  • 1/3 cup sugar
  • 1/2 tsp dry yeast
  • 1 tbsp acacia honey
  • 1 tbsp rum
  • 1 lemon (zest)
  • 1 vanilla pod
  • 1 1/2 tsp salt
  • 1 egg
  • 2 tbsp milk (or plant-based beverage)
  • almond grains
  • powdered sugar
  • 1 cup almond cream

  • 1 Stand Mixer
  • 1 Spatula
  • 1 Knife
  • 1 Baking Tray

Steps

  • Pour the flour, dry yeast, whole eggs, granulated sugar, honey, rum, lemon zest, and vanilla into the bowl of the stand mixer.
    Start the machine and let it knead for about 8 minutes at low speed.
    Add the softened butter, incorporating it into the dough little by little.
    Finish with the salt and knead for another 5 minutes or until a smooth, homogeneous, and elastic dough is obtained.
    Let it rise at room temperature, covered with plastic wrap, until doubled in size.
    Punch down the dough slightly with your hands and place it, covered with plastic wrap, in the refrigerator overnight.

  • Roll out the brioche dough and form a rectangle of half a cm thick.
    Spread the almond cream over half the surface, up to 1 cm from the edges.
    Fold it over. Cut into rectangles of 3×10 cm and seal the edges well.

    Roll each strip onto itself and then form a ring. Place on a baking tray lined with parchment paper, brush with the beaten egg and milk.

    Let it rise for about 2 hours at 78°F (26°C).
    Brush again with egg and milk and decorate with almond grains.
    Bake in a preheated static oven at 390°F (200°C) for 12-15 minutes.
    Once cool, dust with powdered sugar.

Advice

They can be frozen either cooked or raw before the final rise. If frozen raw, just place them directly frozen the night before on a baking tray lined with parchment paper. The next morning, proceed to glaze and then bake them as per the recipe. If frozen cooked, just heat them for a few minutes in a hot oven at 390°F (200°C) or in an air fryer, already defrosted, to regain all their fragrance.
