The almond brioches are delicious swirled brioche rolls filled with almond cream. Made with the same dough as apple turnovers, they have a soft and melting texture. They can also be prepared lactose-free using plant-based ingredients.

Ingredients
- 4 cups all-purpose flour
- 5.3 oz butter
- 6.3 oz eggs
- 1/3 cup milk
- 1/3 cup sugar
- 2 tsp instant dry yeast
- 1 tbsp acacia honey
- 1 tbsp rum
- 1 lemon (grated zest)
- 1 vanilla bean
- 1.4 tsp salt
- 1 egg
- 2 tbsp milk
- slivered almonds
- powdered sugar
- 7 oz almond cream

Steps
Pour the flour, instant dry yeast, whole eggs, granulated sugar, honey, rum, lemon zest, and vanilla into the stand mixer bowl.
Turn on the machine and let it knead for about 8 minutes at low speed.
Add the softened butter gradually, allowing it to incorporate into the dough.
Finish with the salt and knead for another 5 minutes or until you get a smooth, homogeneous, and elastic dough.
Let rise at room temperature, covered with plastic wrap, until doubled in size.
Deflate the dough by kneading lightly with your hands and place it, covered with plastic wrap, in the fridge overnight.Roll out the brioche dough to form a rectangle about 1/5 inch thick.
Spread the almond cream on half of the surface, leaving a 1/2 inch border all around.
Fold in half. Cut rectangles measuring about 1×4 inches and seal edges well.Roll each strip onto itself, then form into a ring. Place on a baking sheet lined with parchment paper, brush with beaten egg and milk.
Let rise for about 2 hours at 79°F.
Brush again with egg and milk, and decorate with slivered almonds.
Bake in a preheated static oven at 390°F for 12-15 minutes.
Once cooled, dust with powdered sugar.
Tips
They can be frozen either baked or unbaked before the final rise. If freezing unbaked, simply place them directly frozen on a baking sheet lined with parchment paper the night before. The next morning, proceed with glazing and then baking as per the recipe. If freezing baked, just heat them for a few minutes in a hot oven at 390°F or in an air fryer to restore their full fragrance.
The dough can also be made by hand.

Can I make almond brioche lactose-free?
Sure, you can replace the butter with margarine and the milk with a plant-based beverage in the same quantities.
