The apple and raisin cake is a very simple pantry dessert, with a soft and moist texture inside, almost melting in the mouth. With just a few pantry ingredients, we’ll get a wholesome snack. Moreover, this cake can also be made with rice flour, making it naturally lactose-free. I also recommend the apple cake with oil, simple and light, while the more indulgent ones might try the apple cake with mascarpone.

Ingredients
- 1 3/5 cups all-purpose flour (or gluten-free rice flour)
- 3/4 cup gluten-free cornstarch
- 4 eggs
- 2/3 cup sugar
- 2 tsp baking powder (gluten-free)
- 7/8 cup rice oil
- 2/3 cup almond milk (or other plant-based milk)
- 1 vanilla bean
- 1 pinch salt
- 2 apples
- 1 lemon
- powdered sugar (gluten-free)

- 1 Electric Mixer
- 1 Knife
- 1 Cake Pan
Steps
Peel the apples and slice them thinly with a knife or mandoline.
Place them in a bowl with lemon juice.Soak the raisins in warm water.
Sift the flour with cornstarch and baking powder.Beat the eggs with sugar, salt, and vanilla with electric beaters or a stand mixer.
When the mixture is frothy and light in color, slowly add the oil.
Add the sifted flour while continuing to mix at low speed.
Alternate with the almond milk.Drain the raisins, pat dry with paper towels and add to the batter, leaving aside a tablespoon.
Pour the mixture into a 9-inch greased pan
Decorate with the apples and remaining raisins.
Bake in a preheated static oven at 350°F for about 40 minutes.Perform the toothpick test, and if it doesn’t come out dry, continue baking for another 5-10 minutes.
Remove from the oven and let cool.
Unmold and decorate with powdered sugar.
