The apple cake by the glass is a simple snack or breakfast cake made with fresh cream and apples, prepared by my grandmother without using a scale. Flavored with orange and orange liqueur, it is very soft and fragrant; for children, feel free to omit the liqueur. You can also use a less refined flour like type 1. Ingredients

  • 4 eggs
  • 1 1/2 cup sugar
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cup fresh whipping cream
  • 1 tablespoon baking powder
  • 2 apples
  • 1 orange (grated zest)
  • 1 tablespoon orange liqueur (optional)

Tools

  • 1 Hand Mixer
  • 1 Glass
  • 2 Bowls
  • 1 Cake Pan
  • 1 Grater
  • 1 Knife

Steps

  • Grate the orange zest and set aside.
    Slice the apples after peeling and drizzle with orange juice.
    In a bowl, crack the eggs, add the sugar and the grated orange zest.

    With a hand mixer, beat at the highest speed until the mixture is light and fluffy. Lower the speed and slowly add the cream while continuing to beat.
    Add the sifted flour with the baking powder and gently fold with a spatula to combine.
    Lastly, add the orange liqueur.
    Pour into a 10×10 inch (25×25 cm) greased baking pan and decorate the surface with apple slices.
    Bake for about 50 minutes at 356°F (180°C) in a preheated static oven.
    Remove from the oven and let cool before dusting with powdered sugar.

Tips

Store in a cake container for up to 3-4 days.

Orange can be replaced with lemon, both for flavoring with grated zest and for drizzling the apples with juice.

A pinch of cinnamon can also be added to flavor the apples.
