Ingredients
- 2 eggs
- 1/3 cup sugar
- 1 pinch salt
- 1/2 vanilla pod
- 7 tbsps extra virgin olive oil
- 1 1/2 cups Maiorca flour (soft wheat type 1) (or type 1 flour)
- 2 apples
- 2 tbsps brown sugar
- 1 lemon
- 1 pinch ground cinnamon
- 1 tsp extra virgin olive oil
Tools
- 2 Bowls
- 1 Mixer
- 1 Knife
- 1 Spatula
- 1 Mold
Steps
Peel the apples and slice them about 1/8 inch thick.
Mix them with the lemon juice and zest, brown sugar, and cinnamon.
Sauté them for 5 minutes with the oil.
Remove from heat and let cool.
Break the eggs into a bowl, add the sugar, salt, and vanilla.
Beat with an electric mixer or in a stand mixer at maximum speed until you get a light and fluffy mixture.
Reduce the mixer speed to low and pour in the oil slowly.Fold in the flour using a spatula.
Pour the mixture into a greased 9-inch mold.
Place the cooked apples on top of the base.
Bake in a preheated static oven at 350°F for 50 minutes.
Remove from the oven and once cool, sprinkle with powdered sugar.
Advice
It can be stored in a cake container for 3-4 days at room temperature.
