Ingredients
- 6.3 oz avocado (ripe)
- 3 eggs
- 0.6 cup sugar
- 1.5 cups gluten-free rice flour
- 0.5 cup orange juice
- 2 tsps gluten-free baking powder
- 1.8 oz gluten-free dark chocolate chips (lactose-free)
- 1 orange (zest, grated)

Steps
Cut the avocado in half and remove the pit. Scoop out the flesh with a spoon. Put it in the blender jar with the eggs and sugar.
Blend until you get a smooth and velvety cream. Add the grated orange zest, juice, flour, and baking powder. Blend again.
Add the dark chocolate chips and mix with a spatula. Grease a 9-inch mold with oil. Pour in the batter and level it with a spatula.
Bake at 350°F in a preheated static oven. Bake for 45 minutes, do the toothpick test; if it doesn’t come out dry, extend the baking for another 5 minutes.
Remove from the oven and let cool. Unmold onto a serving plate and sprinkle with powdered sugar.

Rice flour can be replaced with all-purpose flour in the same quantities.
