The baked cherry jam I propose is very simple to make and contains little sugar. The only drawback is that you have to pit the cherries before cooking, but it’s really worth the effort. Moreover, cherries have always been very expensive, so it’s only worth it if you have a tree of this fruit. Anyway, I recommend trying the Soft Cherry Cakes or the Crumble with Jam.

- 4.4 lbs cherries
- 2.5 cups sugar

Steps
Wash the cherries and pit them.
Place them in a pan and cook the cherries until they are broken down, about 30 minutes.
Add the sugar and transfer to the oven at 300°F in static mode.
Cook for 2 hours, after the saucer test.
Pour into previously sterilized jars, seal with the lids and turn upside down until cooled.

It keeps for up to a year in a cool, dry place.
