The beef stew with apples is a great dish for many occasions, soft and tasty. The tart flavor of the apples perfectly contrasts the richness of the meat. A budget-friendly, simple recipe with few ingredients.

Ingredients
- 3.3 lbs beef (muscle cut)
- 2.2 lbs apples
- 1 glass white wine
- 4 tablespoons extra virgin olive oil
- 1 onion
- 1 sprig rosemary
- 1 sprig thyme
- salt
- pepper
- 2 1/8 cups vegetable broth
- 2 tablespoons flour

Steps
Cut the muscle into 0.4 inch thick slices, then into cubes, and lightly dust them with flour. Pour the oil into a large pot. Add the meat and brown over medium heat on both sides.
Meanwhile, chop the onion and add it to the meat. Let it soften for a couple of minutes on low heat and deglaze with the wine. Let the alcohol evaporate and add the aromatic herbs. Adjust with salt and pepper.
Pour a ladle of hot broth and cook covered with a lid for 1 hour, on low heat. Check from time to time and if necessary add a bit more broth.
Meanwhile, peel the apples and cut them into 0.8×0.8 inch cubes. Soak them in water. After 1 hour of cooking the meat, drain them and add them to the meat.
Add all the remaining broth, adjust with salt, and continue cooking for another 40 minutes. Serve very hot.
Advice
To make it even richer, you can use beef broth instead of vegetable broth.
For a spicy touch, try adding a clove.
