This is a version of the single-serving Black Forest cake, with a non-alcoholic cherry juice base.
The Black Forest cake is a typical German dessert, made with layers of cocoa sponge cake alternating with whipped cream and cherries, decorated with whipped cream, dark chocolate shavings, and candied cherries. The sponge cake is soaked in cherry liqueur. In some European areas, sour cherries replace regular cherries.

Ingredients
- 6 oz egg white
- 3.5 oz egg yolk
- 0.6 cup sugar
- 2/3 cup flour
- 1/4 cup unsweetened cocoa powder
- 1 cup whipping cream
- 1 vanilla bean
- 1/4 cup powdered sugar
- syrup-packed sour cherries

Steps
Place the egg whites in a bowl and beat with an electric mixer until stiff peaks form; set aside.
Sift the flour with the cocoa.
Beat the egg yolks with the sugar until pale and fluffy.
Add the sifted flour.
Gradually fold in the beaten egg whites, mixing with a spatula from bottom to top.
Spread the mixture on a 12X16 inch baking sheet, lined with parchment paper, to a thickness of 1/2 inch.
Bake at 350°F (180°C) for 10-12 minutes.
Remove from oven and let cool.Detach from the parchment and cut out 8 discs of 2.5-3 inches using a cookie cutter.
Whip the cream with the powdered sugar and vanilla seeds.
Moisten each cocoa base disc with cherry juice.
Fill the first disc with cream and add some cherries.
Cover with the second disc.
Spread a thin layer of cream around and on top of the cakes.
Crumble leftover cocoa base and decorate the cakes.
On the last disc, create cream tufts and decorate with cherries.Let cool in the refrigerator for at least 4 hours before serving.
Tips
They keep for 3-4 days, freezing is not recommended. You can freeze the sponge cake.

Why don’t the egg whites whip well?
There can be several reasons, one of the main ones being the use of a plastic container/bowl which may retain traces of fat. It’s recommended to use steel, glass, or ceramic.
Can I make a lactose-free Black Forest cake?
Yes, by using lactose-free cream with lactose below 0.01% or vegetable cream.
