The brioche with orange marmalade is a perfect leavened pastry for breakfast, light and fluffy. During baking you will smell an intense aroma of butter and orange marmalade, a perfect combination. I chose to make a braid, but other shapes can be made too.

Ingredients

  • 4 cups all-purpose flour
  • 2/3 cup sugar
  • 2 tsp fresh yeast
  • 6 eggs
  • 7 oz butter
  • 1 tbsp water (if necessary)
  • 1 vanilla pod
  • 1 tsp salt
  • 1 1/3 cups orange marmalade
  • 1 egg yolk
  • 1 egg
  • 2 tbsp sliced almonds

  • 1 Rolling pin
  • 1 Baking sheet

Steps

  • In the mixer bowl, add flour, sugar, and crumbled yeast.
    Start kneading by adding eggs.
    When the dough is formed, add salt and 1/3 of the butter. If the dough is too dry, gradually add 1 tablespoon of water.
    After the first part of the butter is absorbed by the dough, add the second and then the third.
    Cover with plastic wrap and let it rise until doubled at 75°F (24°C), about 2 hours.
    Deflate the dough and roll it out on a lightly floured surface, forming a rectangle about 1/2 inch thick.
    Spread the orange marmalade and roll up.
    Cut the roll in half to obtain 2 strands.
    Braid the two cords and place them on a baking sheet lined with parchment paper.
    Cover with plastic wrap and let rise at 79°F (26°C) until doubled, about 1 hour 30 minutes.
    Brush with beaten egg and sprinkle with sliced almonds.
    Bake at 356°F (180°C) for about 40-45 minutes in a preheated static oven.
    If after the first 20 minutes the color starts to become too dark, cover the braid with aluminum foil and continue baking. Always do the skewer test.
